    Great recipe! I sauteed the shallots with the garlic, some butter, the mushrooms and the cranberries. Deglazed the pan with Gewurtstraminer wine before adding everything to the loin. Didn't have rosemary so I used thyme. Added a pork rub mix I had that included paprika and brown sugar so I omitted the syrup. Cooked it in lard in a cast iron dutch oven and added cider vinegar, the unused apples, and chicken broth to the pan before putting it in the oven. Made an awesome gravy out of the juice. So good.
