This low calorie recipe is a much healthier option for satisfying your burger cravings. Made from a combination of rice and crab, this burger takes full advantage of garden variety vegetables such as zucchini and leeks that not only give this recipe its hearty flavors, but also helps to soften the consistency of the actual patty. Served with a side of mixed greens, this summer recipe will be to the delight of any of your lunch guests.

Ingredients

  • crab sticks
  • lemon juice
  • 1 cup cooked rice
  • 1 leek (white part, chopped)
  • 1 zucchini (no seeds, chopped)
  • 2 garlic cloves (chopped)
  • parsley (minced)
  • 1 egg (beaten)
  • salt (to taste)
  • ground black pepper (to taste)
  • cumin (to taste)
  • olive oil (to taste)

Directions

  1. Chop the crab sticks, and sprinkle with lemon juice.
  2. In a bowl, mix the cooked rice with the crab, leek, zucchini, garlic cloves, and parsley. Stir in the slightly beaten egg.
  3. Season with salt, pepper, and add flavor with cumin.
  4. Refrigerate for 30 minutes.
  5. Preheat oven to 180 degrees Celsius.
  6. Form small balls, and flatten into burgers.
  7. Place burgers in a baking pan greased with olive oil, sprinkle with a little olive oil, and bake for 25 minutes until toasted.

I loved the texture the rice gave these burgers. They were very tasty and filling. I did flip them about half way thru the cooking time so that both sides would be browned. I served them with an easy mixed greens salad and some condiments on the side.
