Ingredients

  • 2 teaspoons oil
  • 4 spring onions (sliced, extra sliced to serve)
  • 1 teaspoon fresh ginger (grated)
  • 2 cups chicken stock
  • 3 1/2 ounces vermicelli noodles
  • 1 bunch choy sum (or pak choi, trimmed, sliced)
  • 5 1/4 ounces oyster mushrooms (halved)
  • 5 ounces crab meat (canned, drained, flaked)
  • 1 tablespoon fish sauce
  • 2 teaspoons soy sauce
  • 1 fresh chili (chopped, optional)
  • lime wedges (to serve)

Directions

  1. Heat oil in a large saucepan over medium heat. Sauté onions and ginger for 1-2 mins. Add chicken stock and 2 cups water. Bring to a boil. Break vermicelli in half and add to pan along with choy sum. Simmer for 4 mins, until noodles are tender. Add mushrooms, crab meat, fish sauce and soy sauce. Simmer for 1-2 mins, until heated through.
  2. Ladle into serving bowls. Top with extra spring onion and chopped chili, if using. Serve with lime wedges.
