Crab Stir Fry with Ginger and Chili

  • 1/4 cup vegetable oil
  • 4 crabs (uncooked, cleaned, quartered)
  • 2 tablespoons ginger (grated)
  • 3 red chilies (small, finely chopped)
  • 3 cloves garlic (finely chopped)
  • 2 tomatoes (large, finely chopped)
  • 1/4 cup rice wine vinegar
  • 2 tablespoons cilantro (chopped, plus extra to serve)

Directions

  1. Heat oil in a large wok or frying pan on high. Stir-fry crab segments for 4-5 mins, tossing gently until shells turn orange and meat is almost cooked through.
  2. Add ginger, chili and garlic to wok. Stir fry for 1 min, until fragrant. Stir in tomato, vinegar and cilantro. Stir fry for 2-3 mins, until cooked, tossing frequently. Serve crab with sauce and extra cilantro.
