Ingredients

  • 1 pound sweet potatoes (peeled, cut into 1/3 inch cubes)
  • 2 tablespoons olive oil
  • 3 1/2 ounces couscous
  • 2 ounces baby spinach
  • 1 1/2 tablespoons butter
  • 1/4 cup white wine vinegar
  • 2 tablespoons maple syrup
  • 5 1/4 ounces goat cheese (crumbled)

Directions

  1. Preheat oven to 400°F. Arrange sweet potatoes on a large baking tray, drizzle with oil and bake for 20-25 mins, until tender.
  2. Pour 1/2 cup boiling water over couscous. Cover with plastic wrap and set aside for 5 mins. Fluff with a fork then toss with sweet potato, spinach and butter. Season to taste. Whisk together vinegar and maple syrup and toss with salad to coat. Top with goat cheese. Serve.
