  • 8 tomatoes
  • 100 grams couscous
  • 8 slices bacon (chopped)
  • 200 grams grated cheese (I used Gouda)
  • 1 handful parsley (chopped)
  • 4 tablespoons olive oil
  • salt
  • pepper

    Directions

    1. Cook the couscous according to the package instructions. Usually I transfer the couscous in a bowl and season with salt, pepper and 2 tbsp of olive oil. Then I pour twice the volume of boiling water, cover and let it steam for at least 5 min. Then I fluff it up with a fork and it's ready to use.
    2. Preheat the oven at 200C/400F.
    3. Prepare the tomatoes. Cut the tops and carefully scoop the insides with a spoon. Save the insides, we will add them to the filling later.
