Ready in less than an hour, this Couscous Salad makes a great lunch or dinner entree or can be a great side to accompany grilled meat.

Ingredients

  • 100 grams couscous
  • 1 cup vegetable broth
  • 1/2 lemon
  • 200 grams cherry tomatoes
  • 1/4 zucchini (diced)
  • 100 grams peanuts
  • 1 tablespoon vinegar
  • sugar
  • 3 leaves fresh basil (minced)
  • salt and ground black pepper
  • olive oil

Directions

  1. 1Heat the broth and pour over the couscous in a bowl. Add the lemon zest and rind, salt, pepper, and a few drops of oil. Cover and set aside for 15 minutes.
  2. 2Heat 2 tablespoons of oil in a skillet and saute the cherry tomatoes and zucchini until the tomatoes burst open. Add the vinegar and a generous pinch of sugar. Set aside to cool.
  3. 3Toast the peanuts in a skillet.
  4. 4Add the tomato mixture to the couscous along with the peanuts and basil.
