Ingredients

  • 3 courgette (small)
  • 1 cup parmesan cheese
  • 9 egg
  • 1 teaspoon oregano
  • 5 tablespoons butter
  • 1 cup onion (chopped)
  • 1 teaspoon salt
  • 1 cup milk
  • 1 cup bisquick

Directions

  1. Cook courgette and onions in half the butter with oregano and salt till tender (about 5 minutes).
  2. In blender, mix eggs, milk, cheese, bisquick, salt and remaining melted butter.
  3. Mix well, about two minutes.
  4. Pour into 13-inch dish or pie plate.
  5. Spread courgette all over top.
  6. Bake 30 to 40 minutes at 375 degrees.
