Ingredients

  • 2 cups flour
  • 1 cottage cheese
  • 2 eggs
  • 1/2 cup skim milk
  • 3 teaspoons baking powder
  • chives (Chopped)
  • salt (to taste)
  • margarine (as needed)

Directions

  1. Sift the flour, baking powder and salt in a large container and set aside.
  2. Mix in blender, or simply using a fork, the cottage cheese, chives, eggs and milk.
  3. With your fingers, open a space in the middle of the flour and mix gradually stirring gently, the mixture of eggs and cottage cheese.
  4. Pour the dough into small greased and floured shapes and bake at 200 º C for 20 m.

Using fresh chives and large curd cottage cheese these 5 star muffins are irresistible. I will be fixing up these dainty muffins on a weekly basis.
