Ingredients

  • 1 curd cheese (large, container, or 2 small)
  • 3 eggs
  • 3 egg yolks
  • 3 tablespoons brown sugar
  • 200 grams ground almonds
  • 2 tablespoons honey
  • cinnamon (to taste)
  • lemon zest (to taste)
  • 80 grams self-rising flour
  • 1 tablespoon butter (for greasing)
  • powdered sugar (for sprinkling)

Directions

  1. Preheat 180 degrees Celsius.
  2. Crush the cheese with a fork.
  3. Beat the eggs and egg yolks with the sugar until whitish and frothy.
  4. Add the cottage cheese, ground almonds, honey, cinnamon, and lemon zest. Mix well.
  5. Mix in the flour, and pour the batter in a greased or silicone mold.
  6. Bake for about 40 minutes.
  7. Sprinkle with powdered sugar. Serve.

In this 5 star dish I used organic honey and small curd cottage cheese. I love it so much I make it practically every week. It has the sourness from the cottage cheese and the sticky sweetness from the honey leaving you wanting more.
