Description

Cottage cheese is mild in taste, and easy to break down for mixes, so it provides a very easy way of adding protein to your baked goods while enhancing their taste. This recipe is very simple and calls for eggs, sugar, butter, corn starch and of course, cottage cheese. The mixture will be light and fluffy, and the end result will be the same. Depending on the size of your muffins, baking time is between twenty and twenty-five minutes, so they're sure to be ready by brunch time.

Ingredients

125 grams flour
1 eggs
1/2 tablespoon butter
1/2 tablespoon lard
salt
220 grams cottage cheese (Queijos Lagos, or cottage cheese)
2 whole eggs
4 egg yolks
180 grams brown sugar
25 grams butter
1 tablespoon corn starch

Directions

1Mix the flour, egg, butter, and lard. Knead well with about 0.5 deciliters warm water, and season with a little salt.
2Beat well, and let rest while you prepare the filling.
3Preheat oven to 180 degrees Celsius.
4Use a fork to mash the cottage cheese. Stir in the eggs, egg yolks, sugar, butter, and cornstarch. Mix until creamy.
5Roll out the dough very thin.
6Cut out slices of dough, and line greased and floured cupcake pans with the dough.
7Fill with the cream cheese mixture.
8Bake for 20 to 25 minutes, or until golden.
