Description

Sweet airy chocolate mousse topped with a crunchy cookie crumble ready in under 40 minutes. Milk chocolate, confectioners’ sugar, and cream are balanced by the stiff texture and distinctive taste of the speculoos cookies. Spoon the chocolate mousse into small mason jars and complete with a good layer of cookie crumbles. For extra crunch, add an extra layer of cookie crumble to the bottom of the jar before adding the mousse.

Ingredients

10 cookies (speculoos)
200 grams milk chocolate ("Côte d'Or" or any high quality)
50 grams butter
3 eggs
100 grams heavy cream
25 grams confectioners sugar

Directions

1Crush the cookies to fine crumbs.
2In a double boiler, melt the chocolate and butter.
3Separate the eggs.
4With a fork, mix the egg yolks and the cream.
5Add sugar and melted chocolate, mix well.
6With an electric mixer, beat the egg whites until stiff peaks form.
7Gently fold them into the chocolate mixture with a rubber spatula.
8Divide half of the mousse into 4 dessert glasses.
9Top with half of the ground speculoos, then add another layer of chocolate mousee and finish with the remaining cookie crumbs.
10Cover the glasses and refrigerate overnight..
