Ingredients

  • 1 cup flour (cornmeal)
  • 1/2 cup sugar
  • 2 eggs
  • 1 tablespoon baking powder
  • 1/8 cup butter (melted and cooled)
  • 3/4 cup milk
  • 1 1/2 tablespoons orange rind
  • cooking spray

Directions

  1. Whisk the flour, sugar, eggs, baking powder, butter, milk, and orange rind together. Refrigerate for 20 minutes.

We call these cornmeal hotcakes "hot cakes" in the South. We don't add orange to them though. Sometimes we drizzle them with butter and syrup. Usually we get ripe fresh tomatoes and slice them to serve on top, and then have some fried potatoes on the side. I haven't had these in so long. Now I am going to make a batch up.
