Ingredients

  • 5 red potatoes (medium, peeled)
  • 4 eggs
  • 1 1/2 cups half and half
  • 1 pound corned beef (chopped)
  • 1/2 cup french fried onions
  • 2/3 cup gouda (or cheddar, grated)
  • cherry tomatoes
  • fresh chives

Directions

  1. Preheat the oven to 325°F. Grease an 8 x 8 inch baking dish. Cook the potatoes in boiling salted water for 20 mins. Drain, rinse with cold water and slice.
  2. In a bowl, whisk the eggs and cream together. Season with salt and black pepper. Layer the corned beef, potatoes and onions in the dish and pour over the egg mixture. Sprinkle with the cheese. Bake for 25 mins, until golden brown. Garnish with chives and tomatoes.
