These are super easy to make and turned out great! Not the absolute best cornbread I've ever tasted, but certainly something I will be making again regularly. They were still super moist and delicious for the next few days. Great for breakfast, too!

Ive been making this recipe for about a year now and they always turn out great. I love the muffin format. The only thing I do differently is I soak the cornmeal in the milk for about 10-30 minutes beforehand to eliminate the grittiness of the cornmeal. The longer you soak the less gritty it will be. This last time I also added a chopped up jalapeño to the dough and topped each muffin with some shredded cheddar cheese. Delicious.

It was amazingly good. I normally make a recipe with corn kernels but didn't have any. With the honey I didn't to add additional butter. will make again. Husband loves it!

These are very delicious! I just made some changes. I use corn flour instead of corn meal, use 1 cup of each corn flour and normal flour and use less sugar. They go very well with my two hour chili I make in the fall :-)

I LOVE cornbread, and grew up having it, but for some absurd reason never thought to make it myself until I discovered this recipe. I've also tried several other recipes, but this one is my fav. I follow the directions exactly, and I always get great results. Because of this great recipe I now make cornbread all the time and couldn't be happier, :)

This is a yummy recipe. I made a double batch for my small group to serve with chili and Turkey soup. They were a big hit. I did modify the recipe purely by accident. (I like to stick to suggestions). I added 2 T. vanilla. I forgot about the butter in the microwave. I eliminated it all together and they muffins were fabulous in spite of it.
