  • 1 cup peas (frozen baby)
  • 1 cup corn kernels (canned, drained)
  • 2 tablespoons mint leaves (finely chopped)
  • 2 green onions (thinly sliced)
  • 1 tablespoon fresh lime juice

Directions

  1. Bring a small saucepan of water to a boil. Cook peas 2 mins. Drain and refresh under cold running water.
  2. Add peas to corn with mint, onion and lime juice. Season to taste; mix well to combine.
