Corn and Cilantro Fritters

Ingredients

  • 15 ounces creamed corn
  • 1/2 cup self rising flour
  • 1/2 cup cilantro leaves (fresh, chopped + a few leaves reserved, to garnish)
  • 2 spring onions (finely sliced)
  • 1 egg (lightly beaten)
  • 4 slices bacon (to serve)
  • 1/2 cup tomato salsa (to serve)
  • 3 cups baby arugula (to serve)
  • crusty bread (to serve)

Directions

  1. Combine corn, flour, chopped cilantro, onions and egg. Mix until just combined. Season to taste.
  2. Heat a nonstick frying pan over medium heat. Lightly coat with oil. Working in batches, spoon 1/4-cupfuls of batter into pan, flattening slightly, and cook for 3-4 mins per side, until cooked through. Set aside and cover to keep warm.
  3. Add bacon and fry for 4-5 mins per side, until golden and crisp. Drain on paper towels.
  4. Serve fritters with crispy bacon, tomato salsa, reserved cilantro, arugula and crusty bread.
