- 2 cups Corn Flakes Cereal (finely crushed)
- 2 teaspoons fresh dill (chopped)
- 1/8 teaspoon cayenne pepper (or to taste)
- cracked black pepper
- 16 ounces halibut fillets
- 1/3 cup light mayonnaise

I crushed the cornflakes by placing them in a zip-top plastic bag, sealing it, and pressing with a rolling pin. I loved the crunchiness of the fish and served it with fresh green salad and oil vinaigrette. If you don't want to brush the fish with mayonnaise to cook it, you could dip it in milk and then roll it over the crushed cornflakes. If you do this, you could also make your own dipping sauce using the mayonnaise, the pepper and some drops of lemon.
