Combining the light crunch of cornflakes with the softness of your favorite cookie, these cornflake cookies give breakfast cereal a new purpose. For additional sweetness, use Frosted Flakes.

Ingredients

  • 115 grams butter
  • 85 grams sugar
  • 1 egg
  • 200 grams plain flour
  • 1/2 teaspoon baking powder
  • 140 grams cornflakes

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. Beat the butter and sugar until creamy. Add the egg, and beat again.
  3. Add the flour and the baking powder, mix well.
  4. Add the flakes, and mix gently with a spoon in half a dozen laps.
  5. With a teaspoon, remove small portions of dough, and place slightly apart on a baking tray lined with parchment paper.
  6. Bake for 12 to 15 minutes, until golden.
  7. Remove, and cool on a wire grid. When cooled, store in an airtight container.

If you like corn flakes and cookies, you should give this recipe a try. Combining the two is a great idea! I love the crunch of the corn flakes with the texture of a normal cookie. They are sweet made like this, but for even more flavor, you can use frosted flakes as well. They taste great either way!
