Was looking for a corn bread recipe and discovered this concept of CORN CASSEROLE. What a great find! It is our new go to recipe for cornbread. Adjustments: I combine a few different recipes together each time. Have added: pinch of red peppers; jalapeños; topped with Swiss cheese and cheddar mix. Usually crank up oven to BROIL for last two minutes. Warm up leftovers in oven (cover with foil) instead of microwave.

This was really good. Reminded me in a way of the cornbread chi chi's used to make. I also used to buy the packet from the store of chi chi's cornbread and same thing. This is way cheaper though!
