Coriander Potatoes with Tomato Avocado Salsa

Ingredients

  • 1 pound new potatoes (baby, halved)
  • 1 teaspoon salt
  • 2 teaspoons coriander seeds (lightly crushed)
  • 1 clove garlic (chopped)
  • 2 tablespoons olive oil
  • 4 tablespoons canned chopped tomatoes
  • 4 tomatoes (cut into thin wedges)
  • 1 red onion (small, thinly sliced)
  • 1 avocado (medium, sliced)
  • 3 tablespoons cilantro (chopped)
  • salad (to serve)

Directions

  1. Preheat oven to 400°F. Toss potatoes with salt, coriander, garlic and 1 tbsp oil. Spread out on a large baking sheet. Bake for 25-30 minutes, until softened and golden.
  2. Mix together remaining ingredients and oil and season to taste. Spoon over the potatoes. Serve with salad.
