Ingredients

  • 150 grams couscous
  • 200 milliliters boiling water
  • salt
  • olive oil
  • 1/2 lemon juice
  • 2 tablespoons fresh coriander (chopped)
  • 4 tablespoons sweet corn
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic (crushed dried)
  • 1 can tuna fillets
  • 1 slice bread (Alentejo, cut in small squares, or other dense bread)

Directions

  1. 1Place the couscous in a bowl, and pour in boiling water, with a pinch of salt, and a drizzle of olive oil.
  2. 2When the water is completely absorbed separate the grains with a fork.
  3. 3Sprinkle with lemon juice, and add the coriander and sweet corn. Mix well.
  4. 4Heat a saucepan, and add the bread.
  5. 5Drizzle with a little bit of olive oil, sprinkle with oregano and garlic, stir and toast.
  6. 6Place the couscous in a large platter, add croutons, and tuna fillets.
  7. 7Garnish with coriander leaves, and a wedge of lemon.
