Excellent, but using chicken breast next time. Searing the chicken skin was a disaster, boiling hot spitting fat at me, and a mess all over the floor. Flavors were insane though! Serve with mash. Comfort food. I doubled the carrots as I love veggies.

Brilliant recipe. There’s two of us but made enough for four and ate the lot! Nothing better for a dark, depressing February night. The brandy really adds to the sweetness. Worked well with mash. Will make again. Robin

Lovely, only difference I made was less red wine and more stock as my young son was sharing

It turned out great! I seasoned it to my taste and found a great red wine to cook with. I definitely recommend giving it a try.

Have tried this twice. A bit bland the first time; brine chicken for flavor and texture, added half a leek, 2 celery stalks, 4 tbsp butter to cook veg in garlic to 4 lg cloves. Included half tsp red pepper flakes and an additional healthy splash of wine with mushrooms to freshen.
Better reviews.

Tasted yummy, adapted for slow cooker, sauce was a bit thin but that happens with slow cookers. Used shallots as that’s what I had to hand and Italian seasoning rather than thyme. Would use as a basic recipe again.
