  • 1 onions (large, or 2 smaller onions, chopped)
  • 3 celery (ribs, finely chopped)
  • 1 green pepper (finely chopped)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 tablespoons cooking sherry
  • 4 sun-dried tomatoes (finely chopped)
  • 6 cloves garlic (minced)
  • 15 ounces Great Northern Beans (undrained)
  • 15 ounces red kidney beans (dark, undrained)
  • 15 ounces black beans (undrained)
  • 15 ounces diced tomatoes (seasoned, I use basil and garlic seasoned)
  • 15 ounces fire roasted diced tomatoes (If you can’t find these, 2 cans of the seasoned tomatoes will work fine)
  • 4 1/2 ounces chopped green chilies
  • 12 ounces tomato sauce
  • 3 tablespoons chili powder
  • 1/2 teaspoon cumin
  • 1 tablespoon sugar
  • 20 dashes franks (’s hot sauce, if desired)
