Ingredients

  • 50 grams salted butter (softened)
  • 75 grams flour
  • 1 egg
  • 1/2 teaspoon baking powder
  • 25 grams grated cheese (sharp cheddar or swiss)
  • 40 grams roquefort (Papillon)
  • 20 grams nuts (crushed)
  • 20 grams dried cranberries

Directions

  1. Preheat oven to 210 degrees Celsius.
  2. Mix the softened butter and flour.
  3. Add the egg and the baking powder, then the grated cheese, the roquefort (in small pieces), the nuts, and the cranberries.
  4. Mix quickly until you obtain a smooth paste.
  5. Form about fifteen cookies and place them a on baking sheet covered with parchment paper.
  6. Cook for about 10 minutes until lightly browned.
  7. Let them cool down before transferring them. Serve them lukewarm or cold.

These are a little hard which makes them a cookie perfect for dunking. Keep them in an airtight container in a cool place, because they are definitely better cook than warmed.
