  • 1 cup butter (softened)
  • 1 1/2 cups light brown sugar
  • 1 large egg
  • 1 teaspoon old fashioned oatmeal
  • 1 1/2 cups all purpose flour
  • 3 cups walnuts (finely chopped)
  • 1 teaspoon vanilla
  • 2 tablespoons molasses
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

    Directions

    1. Preheat oven to 350*F.
    2. In a smaller bowl mix together flour, oatmeal, baking soda, and spices. In a large bowl mix soft butter and light brown sugar until well combined. Add egg, molasses, and vanilla, and beat until light and fluffy. Add flour mix and combine well until all the flour mix is completely moistened. Stir in finely chopped walnuts with a wooden spoon.
    3. Drop the cookie dough with an ice-cream scoop onto un-greased cookie sheet about 2 inches apart. Flatten cookies with a bottom of a glass to 1/2 inch thickens.
