This simple refrigerator cake is a great dessert for the hot summer months when all you want is cold and refreshing foods. Rich butter cookies are soaked in coffee then layered with a delicate but flavorful pastry cream. As the cake sits in the refrigerator the cookies soften and become almost cake-like. Fresh strawberries are the perfect garnish for this quintessential summer dessert that is best enjoyed at the end of a long and hot summer day.

Ingredients

  • 18 ounces butter cookies
  • 300 grams powdered sugar
  • 250 grams unsalted butter (softened)
  • 2 tablespoons coffee
  • 1 egg yolk
  • 2 eggs
  • strawberries (to decorate)
  • coffee (Strong, for soaking the cookies)

Directions

  1. Cut the butter into cubes, and add the sifted sugar.
  2. Whisk until getting a grainy batter.
  3. Add the egg yolks, and continue whisking until getting a smooth cream.
  4. Add the lemon zest, and 2 tablespoons of coffee.
  5. Beat the egg whites until stiff.
  6. Add the egg whites to the cream without stirring.
  7. Wet the cookies in the coffee, and spread them on the bottom of the tray, or plate.
  8. Cover the wafers with a layer of cream, and repeat until all the cookies have been used.
  9. Finally, cover the whole cake with cream, sprinkle with a grated cookie, and garnish with strawberries.
  10. Refrigerate.
  11. Serve well chilled.

My son calls these chocolate coins! We eat them plain or spread a thin layer of peanut butter on one and place another on top of it to make a cookie sandwich. Our kids have also spread them with Nutella on one cookie and peanut butter on the other before putting them together. We all love them!
