Description

Are you in need of a healthy, rich and inexpensive comfort food meal? How about “Bom Petisco,” which is tuna patties with peas in a butter and mint sauce. The tuna patties are rich and flavorful and include a mash potato puree with butter, milk, salt, nutmeg and pepper. Once mixed well and chilled, they are breaded and fried. This dinner will comfort your family and not break your bank.

Ingredients

  • 2 tablespoons butter
  • 1 onions (chopped finely)
  • 3 cans tuna in oil
  • 1 tablespoon parsley (chopped)
  • 1 lemon
  • 1 teaspoon dijon mustard
  • 2 potatoes (peeled and cut into quarters)
  • 2 tablespoons butter
  • 2 tablespoons milk
  • nutmeg (Suldouro, to season the puree)
  • 2 eggs (lightly beaten)
  • bread crumbs
  • flour
  • 1 teaspoon oregano (Suldouro)
  • salt
  • pepper
  • 600 grams frozen peas
  • 2 tablespoons sea salt
  • 2 tablespoons sugar
  • 1 tablespoon mint leaves (finely chopped)
  • 2 tablespoons unsalted butter
  • white rice

Directions

  1. In a large saucepan, saute onion in butter for about 5 minutes, until translucent.
  2. Season with salt and pepper and add the well-drained tuna.
  3. Add the parsley, lemon zest, and mustard.
  4. Once well mixed, turn off the heat, set aside.
  5. In the meantime, cook the potatoes until they are soft.
  6. Mash the potatoes into a puree, add the butter and milk, season with salt, nutmeg, and pepper, and mix well.
  7. Add the tuna mixture and mix well with the potatoes.
  8. Shape the dough into patties and put in a large dish (to make them harder, you can put the dough in the fridge for at least an hour).
  9. Beat the eggs, put the flour in one dish, and in another one put the breadcrumbs blended with oregano.
  10. Drip the rissoless in egg, then in flour, and finally in breadcrumbs. Fry for about 3-4 minutes on each side.
  11. Put water to boil in a saucepan, season with salt and sugar. Add the peas and cook until they turn bright green.
  12. Strain, and while still hot, add the chopped mint and the butter, stirring gently to mix well.
  13. Taste and adjust seasoning.
  14. Serve with the patties.
