Ingredients

  • 14 ounces mixed beans (rinsed)
  • 14 ounces tuna (in water, drained and flaked)
  • 1/2 pound cherry tomatoes (halved)
  • 2 mini cucumbers (chopped)
  • 1/2 red onion (finely chopped)
  • 2 stalks celery (thinly sliced)
  • 3 ounces roasted red peppers, drained (and chopped)
  • 1/3 cup low fat french dressing
  • 1 head butter lettuce (washed, leaves separated)
  • crusty bread (to serve)

Directions

  1. For the tuna salad, add all ingredients except for the lettuce and bread to a large bowl and toss gently.
  2. Arrange the lettuce leaves on a serving platter and top with the tuna salad. Serve with the bread.
