They say you eat with your eyes as much as with your mouth, and this salad will most decidedly give your peepers much to feast upon. It's also filled with as many flavors (and textures) as colors, thanks to a perfectly ripe tomato that's combined with bell pepper and apple and then layered in a bowl with raisins, for a touch of sweetness. Drizzle with olive oil, add a splash or two of cider vinegar (or other vinegar), season with sea salt, and enjoy.

Ingredients

  • 1 tomato (ripe)
  • 1/2 red pepper
  • 1/2 green pepper
  • 1 apple
  • raisins (to taste)
  • sea salt (to taste)
  • olive oil (to taste)
  • cider vinegar (to taste)
  • oregano (to taste)

Directions

  1. Chop the tomato, red pepper, green pepper, and apple.
  2. Layer the chopped vegetables and fruit in a bowl and sprinkle with some raisins. Season with sea salt and drizzle with olive oil and cider vinegar. Sprinkle with oregano. Serve immediately.
