Ingredients

  • 1 tablespoon sesame oil
  • 1 onion (finely chopped)
  • 1 red pepper (seeded, finely chopped)
  • 1 green pepper (seeded, finely chopped)
  • 2 strips bacon (finely chopped)
  • 3 cups cooked brown rice (1/2 lb dry)
  • 4 ounces canned corn (drained)
  • 6 spring onions (thinly sliced)
  • 1/4 cup light soy sauce
  • 1/3 cup hoisin sauce
  • cherry tomatoes (halved, to serve)
  • leaves (cilandro, to serve)

Directions

  1. Heat oil in a large frying pan or wok over high heat. Sauté onion, peppers and bacon for 3-4 mins. Add rice, corn, spring onion and sauces. Stir-fry for 2-3 mins, mixing well. Transfer to a bowl to cool. Top with cherry tomatoes and cilantro leaves and serve, or cover and chill until ready to serve.
