  • 1 cup pearl couscous (uncooked regualr OR)
  • 1/4 cup corn oil (Mazola)
  • 3 tablespoons fresh basil (chopped, OR parsley)
  • 2 tablespoons red wine vinegar (white OR)
  • 1 clove garlic (minced)
  • 3/4 teaspoon salt
  • 1/4 teaspoon Spice Islands Fine Grind Black Pepper
  • 2 medium tomatoes (diced)
  • 1 zucchini (small, cut in half lengthwise, then sliced into strips)
  • 1 green bell pepper (small red OR, cut into thin strips)
  • 4 green onions (thinly sliced)

    Directions

    1. Prepare couscous according to package directions, omitting butter or margarine; drain if necessary. Cool.
    2. Combine corn oil, vinegar, basil, garlic, salt and pepper in a large bowl.
    3. Add couscous, tomatoes, zucchini, red pepper and green onions; toss to coat. Cover; chill to blend flavors.
