Collard Greens Gratin



This rich and creamy gratin is packed with hearty greens and topped with buttery Parmesan breadcrumbs. The recipe is a Yummly original created by Sara Mellas.


  • nonstick cooking spray
  • 2 tablespoons butter (for onions)
  • 1/2 onion (medium, finely chopped)
  • 2 cloves garlic (minced)
  • 1 pound collard green leaves (chopped, 1.5 lb. per bag)
  • 3 tablespoons flour
  • 1 1/2 cups half and half
  • 3/4 teaspoon salt (for collard greens)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry mustard
  • 1 cup white cheese (shredded, like Gruyere, Swiss, or white cheddar)
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt (for breadcrumbs)
  • 1/4 teaspoon garlic powder
  • 4 tablespoons butter (melted, for breadcrumbs)

    1. Preheat oven to 350°F.
    2. Spray a 9-inch square baking dish with cooking spray. Set aside.
    3. In a large pot over medium heat, melt the butter. Once melted, add onion. Saute for 4-5 minutes, until softened. Add garlic and continue to cook for 30 seconds more, until fragrant.
