  • 3 tablespoons mayonnaise
  • 1 lemon peel (grated and lemon juiced)
  • 2 teaspoons honey
  • 5 stems mint leaves (chopped)
  • 5 stems chives (finely chopped)
  • 5 stems oregano leaves (chopped, reserving some for garnish)
  • 14 ounces red cabbage (thinly sliced)
  • 1/2 cucumber (thinly sliced)
  • 1/2 cup kalamata olives (pitted black)
  • 5 ounces feta cheese (crumbled)

Directions

  1. Mix the mayonnaise with 3 tbsp of lemon juice, the lemon peel, honey and the herbs. Season to taste.
  2. Place the red cabbage, cucumber and olives in a large bowl. Add 1/2 of the dressing; toss to coat. Top with the feta cheese. Garnish with the reserved oregano and serve with the remaining dressing on the side.
