With only 3 ingredients and the use of a blender this dish is perfect for an appetizer.Use of a melon-baller is crucial in this meal. The watermelon brings a sweet flavor to the dish as well as adding color.
- 4 watermelon
- 20 melon
- Remove the rind from the watermelon and place the pieces in the blender. It is not necessary to remove the seeds. Puree until smooth.
- Taste and add sugar, if needed. Strain and place in the refrigerator for a couple of hours. Strain again to remove any trace of seeds.
- Add the soup to serving bowls and add 5 melon balls per serving.

Refreshing on a hot summer day, this was a fun dish I made with my kids. They couldn't get over the fact that you can make soup out of watermelon and that soup could be cold. I will definitely make this one again!
