Finding new ways to dress up tuna can be overwhelming. With millions of recipes out there, how do you know what to pick? This Cold Tuna Cake is a refreshing and flavorful meal. The tuna mixture includes tons of tantalizing ingredients for a powerful palate pleasing punch. All this is mixed and put into bread for a meal that is like a sandwich, but can be eaten with a fork.

Ingredients

  • 8 slices bread
  • 2 tablespoons low-fat mayonnaise
  • 1 tablespoon mustard
  • 1/4 cup bell peppers (canned, sliced)
  • chipotle chili (to taste)
  • 1 tablespoon pickle brine
  • salt
  • ground black pepper
  • 284 grams canned tuna
  • 1 carrot (peeled and diced)
  • 1/4 cup pickles (finely chopped)
  • 1/2 cup sour cream
  • olives
  • chili (jalapeño, in strips)

Directions

  1. Remove the bread crusts.
  2. Using a food processor, mix the mayonnaise, mustard, bell peppers, chipotle, brine, and salt and pepper to taste.
  3. Mix with the tuna, carrot, and pickles.
  4. In square baking pan, place 4 slices of bread. Add the tuna and cover with the other 4 slices of bread.
  5. Spread the sour cream on top, then add salt as needed. Garnish with olives or chili.

This one will surprise you. I didn’t think that it sounded appetizing but my husband insisted. Boy was I wrong, this dish is out of this world. It’s different and I think that is what took me back a bit. It is creamy and gooey and hits all the marks of a great comfort food. I would definitely recommend this recipe to you and I will be making it again. The only thing I did different was decrease the sour cream to ¼ cup and I didn’t add the carrots.
