Ready in only 35 minutes, this appetizer combines tomatoes, mozzarella and basil perfectly with lasagna sheets to switch up the regular Caprese salad.   • 1 sheet lasagna
  • tomatoes
  • buffalo mozzarella
  • fresh basil
  • salt
  • olive oil


  1. Cook the lasagna according to package directions.
  2. Cut the tomatoes and mozzarella into 1/2-centimeter rounds.
  3. Once the lasagna has cooled, cut each sheet into 6 squares.
  4. To assemble, lay down a piece of lasagna, then tomato, mozzarella, basil, and salt. Repeat again to make a tower.

This sandwich, because it’s minus bread, is just so light and refreshing. I found it to be full of flavor, but I didn’t get that bloated feeling when I’ve had too much. It’s simply amazing and the perfect companion to an Italian feast.
