Quinoa is a versatile, high protein grain that contains all nine essential amino acids. It also is gluten free. It can be used in place of rice for a more nutritious meal. This Cold Quinoa Salad with Herbed Yogurt Sauce is perfect for a hot summer day. Other ingredients include mango, orange bell pepper, cherry tomatoes, cucumber and carrots. This dish is packed with nutrition, taste and style. And the herbed yogurt dip is divine!

Ingredients

  • 150 grams quinoa (author´s suggestion: white, red and black quinoa mix)
  • 1 mango (ripe, cubed)
  • 1 orange bell pepper (chopped)
  • 150 grams cherry tomatoes (halved)
  • 1 cucumber (cubed)
  • 1 carrots (grated)
  • salt (to taste)
  • 1 package yogurt (herbed)

Directions

  1. Cook the quinoa in water and salt, following package instructions.
  2. Drain the quinoa and set it aside to cool.
  3. In a bowl, combine the mango, orange pepper, cherry tomatoes, cucumber, and carrot.
  4. Add the cooled quinoa and season the mixture with salt.
  5. Stir in most of the herbed yogurt dip.
  6. Serve, adding additional dressing to taste.
