Description

Made with fresh peas, scallions, lemon and mint, this Cold Pea Soup is full of refreshing flavor. The addition of plain natural yogurt makes this soup extra creamy. Refrigerate the soup until it has chilled and serve cold. Serve with a side salad and herbed rolls, breadsticks, or crackers for a tasty crunch.

Ingredients

  • 250 milliliters vegetable broth
  • 0.5 kilograms peas
  • 1 scallions (diced)
  • 125 grams plain yogurt
  • salt and ground black pepper
  • 1 teaspoon mint (chopped)
  • 1 lemon
  • olive oil

Directions

  1. Heat the broth in a saucepan on medium heat. Add the peas and scallion and simmer for 5 minutes. Puree in a blender and strain twice. Set aside to cool.
  2. Season the soup with salt and pepper and stir in the yogurt. Refrigerate until cold.
  3. Garnish with mint, lemon zest, and a drizzle of olive oil.
