  • 1 pound green beans
  • 3 ounces pancetta (uncooked)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon red wine vinegar
  • 1 tablespoon sliced shallots (thinly sliced)
  • 1 pinch fine sea salt
  • 1 pinch black pepper

    Directions

    1. Wash and trim the ends of the green beans. Blanch and set aside.
    2. In a lightly-greased frying pan, cook the pancetta on medium-high for 5 minutes, or until crispy. Spoon pancetta onto a paper towel to absorb excess grease.
    3. In a large mixing bowl, toss the beans together with the olive oil, vinegar, shallots, salt, pepper, and pancetta. Serve room temperature or chill to serve cold.
