This refreshing--and refreshingly easy--soup would be perfect for lunch or as a starter for a summer dinner party. The recipe calls for cooked, peeled beets, which you can find in vacuum-packs at most supermarkets, or you can boil or roast beets and then peel them before using. The only other ingredients are tomato juice and celery, which are blended along with the beets until silky smooth, and fresh parsley and sour cream or creme fraiche for the garnishes.

Ingredients

  • 1 beet (cooked, and diced)
  • 500 milliliters tomato juice
  • 1 celery stalk (cleaned and diced)
  • salt
  • cream cheese (to taste)
  • fresh parsley (minced)

Directions

  1. Add the beet, tomato juice, celery, and a pinch of salt to a food processor and puree until smooth.
  2. Place in a bowl covered with plastic. Put in the refrigerator to chill for a couple of hours.
  3. Serve in martini glasses with a spoonful of cream cheese and sprinkle some parsley on top.

This was a very unique recipe that I just had to give it a try. It was a very pleasing soup that surprised me with how much flavor it truly had. It was extra creamy and the beets were not extremely strong like I anticipated. Would give this recipe 5 stars and make it again in the future.
