Ingredients

  • 1/2 package rotelle pasta
  • 3 cups cooked chicken (cubed)
  • 1 cup zucchini (diced)
  • 3/4 cup diced celery
  • 1/2 cup mayonnaise
  • 1/8 teaspoon pepper
  • 2 tablespoons dried basil
  • 3 tablespoons fresh parsley (chopped, optional)
  • 1 cup diced tomatoes
  • 3/4 cup sour cream
  • 1 teaspoon salt
  • 2 teaspoons lemon juice
  • 1 teaspoon dried oregano

Directions

  1. Cook pasta according to package directions; drain.
  2. Rinse with cold water and drain well.
  3. Add chicken, zucchini, tomatoes and celery.
  4. Place remaining ingredients in blender or food processor and blend until well mixed.
  5. Chill the dressing 1 hour before adding to salad.
  6. Toss salad, coating well.
  7. Makes about 10 cups.
