Description

A moist, delicious cake that begs to be eaten as soon as it is taken out of the oven. Made with freshly brewed coffee, this cake balances the richness of coffee with a light sweetness. Chopped walnuts add an additional crunch to this delectable cake.

Ingredients

  • 250 grams flour
  • 220 grams sugar
  • 50 grams margarine
  • 4 egg yolks
  • 4 egg whites
  • 1 deciliter coffee (strong)
  • 1 teaspoon baking powder
  • 2 tablespoons sugar (for garnish)
  • 1/2 cup chopped walnuts (coarsely)

Directions

  1. 1Preheat oven to 180 degrees Celsius.
  2. 2Grease a 24 centimeter bundt pan with margarine and sprinkle with flour. Set aside.
  3. 3In a bowl, slightly melt the margarine in the microwave.
  4. 4Add 220 grams of sugar, and whisk well.
  5. 5Add the coffee, and then the egg yolks, and whisk well until obtaining a homogeneous dough.
  6. 6Add the flour and baking powder, and continue stirring until blended.
  7. 7In another bowl, whisk the egg whites with a pinch of salt.
  8. 8Add to the previous dough with a spoon, without whisking, mixing gently upwards.
  9. 9Place the dough in the pan, and sprinkle with 2 tablespoons of sugar, and the chopped walnuts.
  10. 10Bake for about 35 minutes.
  11. 11Remove from oven, and unmold.
