Coffee, chocolate chips and ricotta make their way into this otherwise basic coffee cake dough. Whipped egg whites help to keep it airy and light. Baked in a ring pan until tender and golden, it's the perfecrt way to start the morning. Don't have a ring pan? You can also use a 13" x 9" baking pan, in which case it'll take about 40 minutes to cook. Store it covered for up to three days, serving it either warm or at room temperature when the mood strikes.

Ingredients

  • 3 eggs (separated)
  • salt
  • 200 grams sugar
  • 250 grams ricotta cheese
  • 4 ounces coffee (strong espresso)
  • 1 teaspoon vanilla extract
  • 250 grams flour
  • 1 teaspoon baking powder
  • 100 grams chocolate chips
  • powdered sugar

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a bowl, whisk the egg whites with a pinch of salt until stiff. Set aside.
  3. In another bowl, beat the egg yolks with the sugar until light and frothy.
  4. Add the cheese, coffee, and vanilla and continue to beat the mixture.
  5. Add the flour and baking powder and mix well.
  6. Add the chocolate chips and gently fold in the egg white.
  7. Grease and flour and ringed cake pan, and pour in the mixture.
  8. Bake for 45 minutes.
  9. Allow to cool and remove from pan. Sprinkle with powdered sugar.

When I took the first bite of this cake I couldn't believe how flavorful it was. It had a robust coffee kick to it and the ricotta added that extra bit of pizazz that I desired. It was very simple to make and was not too complex; my kids even want to help me make it next time. I will be preparing this 4 star ricotta cake again in a month or so.
