Ingredients

  • 3 large eggs (or 4 medium)
  • 160 grams sugar
  • 80 milliliters olive oil
  • 125 milliliters honey
  • 1 teaspoon ground cinnamon
  • 370 grams cake flour
  • 200 milliliters coffee (strong, warm)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Break the eggs, and separate the yolks from the whites.
  3. Beat the sugar with the egg yolks. While beating slowly add the olive oil, honey, and cinnamon powder.
  4. Add flour alternating with the coffee.
  5. Beat the egg whites until firm.
  6. Mix the dough with the egg whites.
  7. Place the dough in a donut pan, greased with butter and dusted with flour.
  8. Bake for 35 minutes.

This cake is perfect for an afternoon coffee or tea break. The honey and coffee are a great combination. It's not too sweet, but has a really nice balance. I knew it would be good as people kept wandering into the kitchen while it was baking to ask what was in the oven. The aroma is so good, I may have snuck a piece before it completely cooled.
