Only eight ingredients and novice-level baking skills are required to make this welcoming, rich and moist bundt cake, which is made with ground hazelnuts and hazelnut extract. The cake batter is all the more flavorful for the addition of strongly brewed coffee. Furthering the theme, the cooled cake is dusted with cocoa powder before serving. Store the cake, covered, at room temperature for up to three days.

Ingredients

  • 250 grams sugar
  • 250 grams flour
  • 3 eggs
  • 130 grams vegetable oil
  • 130 grams coffee (cold espresso)
  • 2 teaspoons baking powder
  • 40 grams ground hazelnuts
  • extract (Hazelnut)

Directions

  1. Preheat the oven to 180C.
  2. Place the eggs in the mixer with the sugar, beat until foamy.
  3. Add the oil, the cold coffee, and the hazelnut extract.
  4. Fold in the flour sifted with the baking powder and the ground hazelnuts.
  5. Butter a bundt cake pan and add the batter.
  6. Bake for approximately 40 to 45 minutes.
  7. Cool the cake completely and sprinkle with powdered cocoa.

Through all of the bundt cakes I have baked, this one is up there with the greatest. It had a prominent coffee flavor with a light taste of hazelnut that did not overcome you when you ate it. It also made the whole house smell amazing and left my kids waiting in anticipation for it to be done so they could eat it. I can see many more of these 5 star coffee bundt cakes in my home in the future.
