Ingredients

  • 125 milliliters espresso coffee (cool)
  • 250 grams cream cheese
  • 250 grams mascarpone cheese
  • 125 grams sugar
  • 4 egg yolks
  • 8 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder

Directions

  1. Mix the coffee, cream cheese, and Mascarpone cheese well in a bowl.
  2. In another bowl, beat the sugar and egg yolks until frothy.
  3. In still another bowl, whip the cream and vanilla.
  4. Combine the 3 mixtures in a bowl and cover. Place in the freezer for 4 hours, stirring every 30 minutes.
  5. Sprinkle with cocoa powder and serve.

This ice cream is like eating tiramisu. Instead of using vanilla extract, use rum extract instead. Scoop some of this into several small freezer containers lined with two or three lady finger cookies. Top each of them with whipped cream and freeze them. Then, when you want a little delicious treat for yourself, all you have to do is pull one of them out and get a spoon.
