Coffee Flavored Panna Cotta


Brushing the molds with melted dark chocolate keeps the panna cotta from sticking the mold and also provides a bonus: a built-in chocolate topping once the custards are inverted onto the serving plates. A mere teaspoon of instant coffee granules is enough to flavor the whole batch of custard; use instant espresso is a stronger coffee taste is desired. The panna cottas need to chill sufficiently--at least four hours or preferably overnight--before serving, with coffee or espresso as dessert.


  • 500 milliliters heavy cream
  • 200 milliliters whole milk
  • 170 grams sugar
  • 1 teaspoon vanilla extract
  • 1 packet instant coffee
  • 6 gelatin (sheets)
  • dark chocolate (melted to brush inside the mold)


  1. Soak the gelatin sheets in cold water for 10 minutes and wring out the excess water.
  2. Brush the top of the mold with some melted dark chocolate and place the mold in the refrigerator to chill well.
  3. Place the heavy cream in a saucepan with the milk, sugar, vanilla extract, and coffee, and heat the mixture while stirring.
  4. When the mixture begins to boil, turn off the heat and remove the saucepan from the stove.
  5. Add the gelatin sheets and stir well to incorporate.
  6. Pour the mixture in the mold.
  7. Refrigerate for 4 to 5 hours.
  8. Turn the panna cotta out onto a serving platter and garnish as you wish.
