A basic cake batter made from flour sugar, butter, eggs and milk is ramped up with the addition of strongly brewed coffee. Offering a perfect complement, chocolate chips are folded in before baking. Use a generously buttered and floured bundt or ring pan to make this cake, if possible. Let the baked cake cool completely before dusting it with powdered sugar. Serve it with coffee, morning, noon or night.

Ingredients

  • 300 grams flour
  • 170 grams sugar
  • 100 grams butter (softened)
  • 2 eggs
  • 4 ounces coffee (strong)
  • 100 grams milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • salt
  • 60 grams chocolate chips
  • powdered sugar

Directions

  1. Preheat the oven to 180C.
  2. Place the sugar, butter, eggs, coffee, milk, and a pinch of salt in a bowl and beat together. Add the flour and combine, then add the baking powder and the vanilla extract. Add the chocolate chips and stir to incorporate.
  3. Place the batter in a butter and floured cake pan and bake for approximately 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
  4. Remove the cake from the oven and let it cool completely.
  5. Sprinkled with powdered sugar and coffee and serve.

I added a little more coffee to the recipe than it called for, and it turned out amazing. I chose to make cupcakes instead of one whole cake so that I could freeze some of them. I used a zip-lock bag filled with cream cheese and a little sugar mixed together and piped it into the center of the cupcakes. Then, I frosted them with a buttercream icing topped with just a sprinkle of cocoa powder. They turned out so pretty.
