Get your fish wrapped up in a delicious coat of nuts. The mild flavor of this fish blends well with the crunch of almonds and walnuts to deliver a spectacular sensation with every bite. Chives, parsley, lemon, and butter combine to give this dish a velvety smooth, rich flavor, that has just a hint of tartness.

Ingredients

  • 6 codfish fillets
  • 30 grams almonds
  • 30 grams walnuts
  • 10 chive (strands)
  • 5 parsley (stems)
  • 70 grams butter
  • 1 lemon
  • salt

Directions

  1. Preheat oven to 200 degrees Celsius
  2. Remove the edges from the codfish fillets, place on a baking tray or pan lined with parchment paper.
  3. Mix the almonds and walnuts, add chives and parsley. Add the butter, a squeeze of lemon, and a pinch of salt. Mix to get a thick paste.
  4. Spread over the fillets and bake for about 20 minutes.
  5. Serve with steamed green vegetables.

This is a delicious coating for the codfish, and I have used it on tilapia as well. I recommend serving it with something orange or yellow to brighten up the plate.
